Red Velvet Pancakes
Go beyond the predictable breakfast in bed menu and surprise your sweetheart with these tasty and easy-to-make Red Velvet Pancakes.
1 cup all-purpose flour (you may substitute whole wheat flour)
¼ cup sugar
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 cup milk
2 tablespoons unsalted butter, melted
1 ½ tsp vanilla extract
1 tsp red food coloring
Combine flour, sugar, baking powder, baking soda and salt in large bowl; stir well.
Whisk egg, milk, butter, vanilla extract and food coloring together in large bowl. Add to flour mixture; stir to combine.
Heat nonstick skillet or griddle over medium heat. Spray with non-stick cooking spray. Pour ¼ cup batter and cook for 2-3 minutes or until bubbles form on top. Flip and continue cooking for 2 more minutes.
Note: After the pancakes were cooked, we used cookie cutters to cut them into heart shapes. Sprinkle with powdered sugar, pour on maple syrup, and garnish with fresh or frozen thawed berries and a dollop of whip cream. (you can also use some cupcake sprinkles for added color).
Serve with milk and heart-shaped ice cubes made from strawberry milk.
