Sugar-Free/Wheat-Free Oat and Banana Bars
These healthy, high fiber oat and fruit bars are also wheat and sugar free!

These delicious oat bars are both sugar free and wheat free, making them the perfect sweet-treat that can boast an honest healthy serving of fiber and nutrients.
You can make batches in as large or small of quantities as you wish, which helps with portion size and leftovers – simply decide how many bananas you want to use!
All ingredients are in a 1:1:1 ratio. If you use 2 bananas, increase the amount of everything else in the recipe to '2', if you use 6 bananas, increase everything by '6'.
Pre-heat oven to 350 degrees
I am starting with a 2 banana recipe, since it yields one 9 x 9 pan of bars or one dozen dropped cookies:
2 ripe bananas – overripe is fine – mashed in a large bowl
2 cups old fashioned oats – not quick cook, instant, steel cut or groats
2 Tablespoons cocoa powder
2 Tablespoons chia seeds (in health food section of grocery or a whole foods type store)
2 Tablespoons honey (optional)
2 Tablespoons dried cranberries or raisins (optional)
2 Tablespoons unsweetened flaked coconut (optional)
2 dashes cinnamon
Stir all ingredients in bowl with fork until well combined
Grease a cookie sheet or a 9 x 9 pan with coconut oil
Either drop cookies onto sheet with fork and loosely form into 'patties' or press mixture into the pan
Bake 18 minutes – for larger batches, be sure to test dough. When it is firm and slightly browned at the edges, the bars/cookies are done.
Allow to cool, cut and enjoy!
