Cafe Sicilia's Valentine's Day Special: Fettuccini with Smoked Salmon & Crème FraÎche

This year Cafe Sicilia will be celebrating Saint Valentine with a wonderful 4 course menu that includes Italian Dip, Lobster Manicotti, Tuxedo Cake, Chocolate Mousse Bombe and much more.
Remember, they are BYOB so you may bring your own wine!
Fettuccini with Smoked Salmon and Crème FraÎcheServes 2
Ingredients8 oz fresh fettuccini or linguine pasta, homemade or from the refrigerator isle at the grocery store.
1/4 cup reserved pasta cooking water
1/2 tbsp butter
4 oz Crème FraÎche
3 oz smoked salmon, sliced into ribbons
1 tsp fresh dill, chopped
1 tsp lemon zest
fresh grated Parmesan cheese, to serve
MethodCook fresh pasta according to the package instructions. Melt the butter in a non stick frying pan over low heat. Add the Crème FraÎche and stir until melted. Add the cooked and drained pasta. Add half the smoked salmon. If the sauce is too thick add the pasta water a little at a time until the desired consistency is reached.
Spoon onto serving plates and top with the remaining smoked salmon, lemon zest and chopped dill. Serve with the Parmesan cheese.
