As we met to organize another issue of Mansfield Magazine, the warm, breezy and sometimes stormy weather of spring was still upon us. But it was the dog days of summer that we were thinking about as we lined up some great stories that we hope you will enjoy. Baseball is in full swing, the grass is green and soon the smell of chlorine in pools will be in the air. It’s that time of year for outdoor activities.
One popular activity in these parts is outdoor grilling and smoking. We took the opportunity to cover this topic fully in two distinct areas this issue. First up, Cindy Brown researched everything you could ever want to know about smokers in this issue’s HomeStyle section. Propane, electric, charcoal and wood pellet smokers…you can find out all about them and the various kinds of wood often used to smoke in them and how it all combines to flavor the meats. Fascinating stuff for the expert and novice alike.
Now that you’re armed with all that smoking information we turned to Carol Ritchie to offer up some cooking tips and recipes for the smoker. She covers some grilling and barbecuing basics and offers a Cherry-Smoked Salmon recipe that might just cause a fight at the picnic table.
Summer provides ample opportunity to get outside and Mansfield is known for its high-quality parks offering plenty of space outdoors. There are acres of trails and natural beauty to behold and enjoy. So we went to Tiffany Gorrell, the city’s nature education supervisor, for a primer on not only what she does in her job, but to get an idea about all the fun activities offered and available this summer at the local parks. Elsewhere, I got to visit with Travis Johnson, the owner and operator of TJ’s Catfish & Wings in Arlington. If you love sports, wings, catfish or all of the above, this is a great little place to go before or after a ballgame next time you’re in Arlington.
And if the summer month’s make you think about trips to the beach or ocean, then we’ve got a great Roadtrip feature for you this time. Journey down the Texas coast to the Matagorda Bay area. Fishing, water sports, shopping and history all abound at this coastal getaway.
