Karin's Pot de Crème Chocolate Dessert

1 cup fresh cream
10 1/2 ounces good quality Chocolate chips

1 tsp. vanilla essence
2 tbsp. Brandy
1 tbsp. strong coffee (left over from your morning coffee!)

To decorate the dessert:
sweetened cream, whipped
fresh berries

Heat the cream and vanilla essence in a saucepan over low heat until just below boiling. Remove from the heat, add the chocolate chips and stir gently until the chocolate is melted. Stir in the Brandy and the coffee. Pour into glasses or small pretty bowls. Refrigerate for one hour.
Decorate with the whipped cream and fresh berries.

This dessert is very rich so only a small serving is required for each person. This dessert lends itself to all kinds of variations!
You could substitute the Brandy for Amaretto and serve with biscotti for an Italian twist.

If it is served at the end of a Mexican meal you could add a pinch of red chili flakes to the chocolate and a little cinnamon to the sweetened whipped cream.
