  • 1 package store bought ravioli (mushroom or cheese filling)
  • 4 cups sliced mushrooms (a mix of cremini and button mushrooms)
  • 1 shallot finely diced
  • 1 large clove garlic, minced
  • 2 tablespoons chopped parsley
  • 1/3 cup sun dried tomatoes
  • 1 cup heavy cream
  • 1/2 cup Marsala wine
  • 3/4 cup chicken or vegetable stock
  • 1/3 cup reserved pasta water
  • 1 - 2 tablespoons olive oil for frying
  • knob of cold butter
  • salt and pepper to taste


Cook the ravioli according to the package instructions. Remember to salt the pasta water really
well! Sauté the mushrooms, shallot and garlic in olive oil until the mushrooms have released
their liquid. Add the Marsala wine and flambé. Once the alcohol has burned off add the sun
dried tomatoes, chicken stock and the cream. Simmer until the sauce has thickened. Add the
cold butter and the chopped parsley. Season to taste. If the sauce gets too thick add a little
pasta water at a time until the sauce reaches the desired consistency. Pour the sauce over the
pasta and serve immediately. Serves 2 as a generous main course or 4 as an appetizer.
