Pumpkin Pie Mousse Tiramisu


2 cups brewed coffee
1/4 amaretto Liqueur
3/4 cup granulated sugar (divided)
1 can Libby pumpkin puree (15oz)
1 1/2 tsp pumpkin pie spice
1/4 tsp kosher salt
1/2 light brown sugar
1 tsp vanilla extract
1 1/2 cup mascarpone cheese
2 1/2 cup heavy cream (divided)
2 packages (7oz) each ladyfingers


Add 2 tablespoons of the granulated sugar to the hot brewed coffee, stir until the sugar has dissolved. Add the Amaretto Liqueur. Pour into a shallow dish and refrigerate until cooled. 

In the bowl of an electric mixer whisk the pumpkin puree, brown sugar, 1/2 cup granulated sugar, pumpkin pie spice and vanilla extract until well incorporated. 

Stir in the mascarpone cheese, mix until mostly incorporated. Add 1 1/2 cups heavy cream and whisk until soft peaks form. Be careful not to over beat the mixture! 

Dip the ladyfingers (both sides) in the coffee mixture. Arrange them in a single layer in a 4-quart trifle dish (or individual glasses). Top with a layer of pumpkin mousse. 

Repeat the layers. 

Finish with a layer of pumpkin mousse. Leave enough room for the whipped cream. 

Cover and refrigerate overnight or until set. 

To serve, whisk the remaining 1 cup of cream with the remaining 2 tablespoons of sugar until soft peaks form. Dollop the whipped cream over the tiramisu and garnish with shaved chocolate.
