Cafe Sicilia's Red Velvet Cookies

Red Velvet Cookies

Makes about 3 Dozen cookies


3 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 tsp. baking soda
1/2 tsp. table salt
2 sticks unsalted butter, softened
2 cups sugar
2 eggs
1 tbsp. liquid red food color
2 tsp. distilled white vinegar
2 tsp. vanilla extract
12 oz good white chocolate chips


Preheat oven to 375°. Line baking sheets with parchment paper.

Whisk together flour, cocoa, baking soda and salt in a bowl.

Cream butter and sugar in a separate bowl with a mixer on medium speed until light in color and fluffy. About 5 minutes.

Beat in eggs, food coloring and vinegar.

Mix flour mixture into creamed mixture just to combine. Stir in white chocolate chips.

Scoop dough (about 2tbsp) onto prepared baking sheets.

Bake cookies until edges are set, 12 - 14 minutes. Let cookies cool on baking sheet, 5 min, then transfer to a rack.
