Cookin’ with Carol’s Minty Mango Yogurt Parfait

As the weather warms up, the craving for a refreshing treat is a constant temptation. However, if you're trying to stay on a healthier track, eating ice cream is off the table.
We got in touch with Carol Ritchie from Cookin' with Carol for a tasty and healthy chilled treat!
Minty Mango Yogurt Parfait by Carol RitchieIngredients
1 tablespoon honey
1 teaspoon of lime zest
2 tablespoons of fresh lime juice
1 tablespoon of chopped mint
Greek yogurt (or preferred)
Fresh mint sprigs
In a bowl, whisk together 1 tablespoon honey with 1 teaspoon of lime zest, 2 tablespoons of fresh lime juice and 1 tablespoon of chopped mint.
Layer the mango mixture in a glass with yogurt, garnish with fresh mint sprigs.
