Cafe Sicilia's Eggless Pistachio Tiramisu

Pistachio Tiramisu (eggless)
1 container (8oz) mascarpone cheese, room temperature
1 cup heavy cream
2 1/2 cups strong black coffee, cooled
5 tablespoons coffee liqueur (or to taste)
1 teaspoon vanilla extract
4 oz pistachio nuts, unsalted, shelled and chopped
2/3 cup powdered sugar, sifted
unsweetened cocoa powder for sifting
2 dozen lady finger cookies
Beat the cream, vanilla extract and powdered sugar until soft peaks form. Fold in the ROOM
TEMPERATURE mascarpone cheese. Pour the coffee and the coffee liqueur into a shallow dish.
Quickly dip the cookies one at a time, into the coffee mixture and layer side by side in the
bottom of a 9x9 dish. Or you could make individual desserts in small mason jars or glasses.
Spread half of the mascarpone mixture over the cookies. Dust with cocoa powder. Sprinkle a
layer of nuts over the mixture. Repeat another layer. Chill overnight or a minimum of 4 hours.
For a more traditional tiramisu the pistachio nuts can be omitted.
